"that's the way the cookie crumbles..."

Exam time for me means lots of over indulgent comfort eating,.. So, with that in mind, despite being completely overloaded with essays, studying and looming deadlines, I decided to take a break and bake some of my favourite cookies.
This recipe for 'Cowboy Cookies', is taken from the Moosewood Restaurant Book of Desserts. I have fond childhood memories of coming home from school each day to a different snack or pudding fresh from the oven, baked to perfection by my lovely mum, and these cookies are no exception. I now know the recipe off by heart and can whip up a batch of these in no time so they're perfect if you're in a rush or are looking for a simple tasty snack to make friends and family!







Preparation time: 20 to 25 minutesBaking time: about 12 minutes per batch
Oven temperature: 180 C/350 F 

1 cup butter, at room temperature

½ cup sugar
½ cup packed brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups unbleached white pastry flour
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
2 cups rolled oats
12 ounces semi-sweet chocolate chips (about 1 ½ cups)  




The recipe is very easily adaptable so you could make these hearty cookies somewhat healthier by adding chopped nuts or stirring some chia seeds into the mix before baking. (The rolled oats also mean lots of slow release energy!!)

The Awkward First Post

Starting a blog has been something I've wanted to pursue for a long time now, but have never had the courage to do so. So I set myself the New Years resolution of finally putting myself out there (yes I'm aware I'm a little late as it is already February...but hey! Better late than never). 
Ultimately, I feel like blogging is the perfect escape (definitely not procrastination) from continuous University deadlines and the stresses of everyday life. A way in which I can share things I'm truly passionate about, with others. 

I'm completely new to all this, so if by some crazy chance people are actually reading this, then I hope you enjoy following me on my journey towards *hopefully* becoming a successful lifestyle blogger.
